Jan. 12--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Dec. 31 to Jan. 6.

-Observed onions stored directly on the floor and next to the entrance to the employee bathroom, thus exposing the onions to potential contamination from the surrounding environment. Onions had recently been placed there from a delivery and were promptly relocated to a sufficient food storage area.

-Observed rice, onions, and sauce stored directly on the floor in the dry storage and kitchen areas, rather than 6 inches off of the floor as required. Store all food product at least 6 inches off the floor to prevent contamination.

-Deli Slicer, a food contact surface, was observed to have dried food residue and was not clean to sight and touch. Corrected on site by cleaning and sanitizing at time of inspection. Ice Machine hopper and reservoir, a food contact surface, was observed to have black slime residue and was not clean to sight and touch. Corrected on site by disposing of all ice on site at time of inspection and cleaning the unit at time of inspection.

The unit has not held temperature in the past. The unit must hold 41 degrees at all times. Repair or replace unit. Food to be moved to another refrigerator until this unit is repaired.
