Aug. 24--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of August 12-18.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-An unrefrigerated truck was delivering an order to the food facility at time of inspection. Order contained Longaniza not received at proper temperature, refrigerated at 41°F or below. Ensure that food is at proper temperature when receiving shipments.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by the risk factor violations in this inspection. PIC must have adequate food safety knowledge.

-Tofu and longaniza was held at 53°F, rather than 41°F or below as required. Food was discarded. Repair cold holding units and check temperatures at time of food delivery.

-Out of temperature time/temperature control for safety foods were found in the large multi-door refrigerator in the facility. All foods in cold holding must be maintained at or below 41 degrees F. The out of temperature product was ordered discarded.

-Soap and paper towels were not provided at the hand sink in the kitchen. Provide soap and paper towels at this location.

-Tomatoes sauce made the previous night was found in a refrigerator at 104 degrees F. Foods being cooled must be cooled quickly using the two step cooling process. Food must be brought from 135 degrees F to at or below 70 degrees F within two hours and to at or below 41 degrees F within four additional hours. The improperly cooled sauce was ordered discarded.

-The slicer was dirty. Clean and sanitize the slicer.

-A package of raw ground beef was observed setting on top of cheese in a refrigerator in the facility. Store raw meats below and away from other foods.

-Raw beef was being stored above Ready to eat(RTE) product such as mayonnaise in the low boy refrigerator. Raw animal products must be stored below RTE product.

-Commercially processed ready to eat food, such as deli meat, located in the deli display case, and held more than 48 hours, is not being marked with the date it was opened. Date mark such items with the date they were opened and discard with in six days of that date.

-Seafood was held at 47°F, in the refrigerator on cook line, rather than 41°F or below as required. Temperature log indicated food had been out of temperature earlier in the day. Food was discarded. Do not place food in the bottom half of this unit until it is repaired.

-Food Employee observed donning single use gloves without a prior hand wash. Employees must wash hands prior to donning gloves.

-Time/Temperature Control for Safety food in multiple coolers is not being date marked or is past the date of expiration. Food was discarded. Date mark all foods being held for more than 24 hours and use or discard within 7 days.

-Food residue, Food equipment and utensils observed in the handwash sink, indicating uses other than handwashing. Handwash sinks must be used only for handwashing.

-There is black residue around door of ice bin in bread room. Discard ice, clean and sanitize ice bin.

Marcos Pizzeria

-Cheese and sauce was held in the cold hold unit at 45F and 47F, respectively. Cold held product must be stored below 41F. Product was out of temperature less than 4hrs and placed in the walk-in cooler, new product was put in the unit. Keep cover closed on unit when not in use, to help maintain temperature.

-The deli slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. Clean and sanitize this unit.

NORTHAMPTON COUNTY

-The slicer and the can opener had food debris on them. Dismantle the slicer and clean and sanitize the entire slicer and the can opener. Maintain them in a clean and sanitary condition.

-The ice machine requires cleaning to remove a mold like growth from the interior of the machine. Discard the ice and clean and sanitize the machine.
