Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Feb. 2-8.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department’s statewide inspection database.

The violations listed here are those that are classified as “Foodborne Illness Risk Factors and Public Health Interventions,” which can result in illness if not corrected. -Slicer is not cleaned at an appropriate frequency. Ensure that slicer is cleaned after each use or every fours hours if used continuously.

-Cut meats are stored in the meat walk-in with no covering. Provide food grade covers for foods in storage.

-Raw meats were stored directly next to produce in the walk-in cooler. Raw chicken was stored next to and above raw pork in the meat department cold hold and retail floor cold hold respectively. Store meats separately from produce and follow proper storage hierarchy.

-Prepared salads and desserts in the deli cold hold are not being dated marked. Date mark TCS foods being held for more than 48 hours.

-Raw chicken was stored above raw pork in the refrigerator across from the grille. Raw chicken was also stored above ready to eat tortillas in the storage room refrigerator. Always store raw chicken below other raw products and ready to eat foods. Move chicken to lowest shelves in both refrigerators.

-A knife stored on a magnetic strip on the wall, a food contact surface, was observed to have food residue and was not clean to sight and touch. Clean and sanitize the knives after use.

-Raw chicken was stored above beef patties in the freezer in the back of the store. The chicken was in a box and showed signs of thawing evidenced by dripping blood from the box. Raw chicken must be stored below beef products. Move the chicken so it is below the beef patties.

-The handwash sink behind the counter was blocked by crates and not accessible at all times for employee use. Move the crates to make the hand sink accessible to employees.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

-Sliced cheese and deli meats were observed in walk-in cooler without any date markings. Slices of commercially processed chocolate cake, cheese cake and tiramisu were observed in reach-in refrigerator at bar area without any date markings and not in original packaging.

-Pizza dough, cut vegetables, and tomato sauces foods were held at 53 \u00b0F, in the pizza prep cold hold unit, rather than 41\u00b0F or below as required. All items voluntarily removed from cold hold unit and disposed of during inspection.
